Ingredients:

  • 1 medium. chopped onion
  • 3 cloves of finely chopped garlic
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 8 oz . of tomato sauce
  • 1 1/2 tsp salt
  • 2 tbsp parsley
  • 2 cups long grain rice ( basmati is what i use)
  • 3 1/2 cups water
  • optional
  • 1 (12-16 oz. can) of beans- kidney

Directions:

  1. Rinse rice well with water in strainer and set aside to dry. Chop the garlic, pepper, and onion.
  2. Heat butter and oil over medium heat in sauce pan. Add the chopped garlic and lightly brown.Then add the chopped onion and pepper. Cook for 2-3 min. Add the tomato sauce, salt, and chili powder to pan. Then add the water and stir. Stir well then add the rice and parsley(Optional: add beans). Stir well. Bring to boil then turn burner to low and cover. Simmer for 30 min. Fluff with fork. Serve.
  3. Optional: Add some beans with the rice for some added heartiness. I like to add kidney or black beans, About 1 (12 oz) can is sufficient. Rinse beans well and then add it in when you add the rice.
