Spanish Rice

This rice is so tasty and full of flavor. It goes great as a side to many dishes. It's even goes great in tacos and burritos.
Ingredients:
1 med. chopped onion
1 med. chopped green pepper
3 cloves of finely chopped garlic
2 tablespoon olive oil
1 tablespoon butter
8 oz . of tomato sauce
1 1/2 teaspoon salt
2 tablespoons parsley
2 teaspoons chili powder
2 cups long grain rice ( basmati is what i use)
3 1/2 cups water
optional
1 (12-16 oz. can) of beans- kidney or black beans
Directions:
1. Rinse rice well with water in strainer and set aside to dry. Chop the garlic, pepper, and onion.
2. Heat butter and oil over medium heat in sauce pan. Add the chopped garlic and lightly brown.Then add the chopped onion and pepper. Cook for 2-3 min. Add the tomato sauce, salt, and chili powder to pan. Then add the water and stir. Stir well then add the rice and parsley(Optional: add beans). Stir well. Bring to boil then turn burner to low and cover. Simmer for 30 min. Fluff with fork. Serve.
3. Optional: Add some beans with the rice for some added heartiness. I like to add kidney or black beans, About 1 (12 oz) can is sufficient. Rinse beans well and then add it in when you add the rice.
