Ingredients:

  • 1 medium potato, washed and (fairly finely) diced
  • 4 eggs
  • about 2 tbsp. emeril's southwest essence (buy in store or make your own. i make my own - recipe available online)

Directions:

  1. Melt the butter in a medium size skillet.
  2. Add the diced potatoes and season with the Essence. Cook until almost done.
  3. Crack and pour the 4 eggs over the potatoes.
  4. Quickly sprinkle the cheese over the egg and potato.
  5. Stir, combining all ingredients to make sure the flavors are evenly dispursed.
