This dish tastes great as is, but can easily be modified to add meat or other vegetables. With a side of buttered toast, and breakfast meat (if not in the scramble already), and you got yourself a great breakfast! Read more !
Ingredients:
1 medium potato, washed and (fairly finely) diced
4 eggs
about 2 tbsp. emeril's southwest essence (buy in store or make your own. i make my own - recipe available online)
2 tbsp. unsalted butter
2 - 4 ounces of your favorite shredded cheese (i use cheddar)
Directions:
1. Melt the butter in a medium size skillet.
2. Add the diced potatoes and season with the Essence. Cook until almost done.
3. Crack and pour the 4 eggs over the potatoes.
4. Quickly sprinkle the cheese over the egg and potato.
5. Stir, combining all ingredients to make sure the flavors are evenly dispursed.
