Southwest Sausage Casserole

Ingredients:

Directions:

  1. Fry sausage and drain.
  2. Add onions and pepper; saute about 5 minutes.
  3. Combine eggs, milk and spices.
  4. Grease 13 X 9 pan.
  5. Line bottom with half of tortilla strips, then sausage, chiles, and Jack cheese.
  6. Repeat second layer, ending with cheese.
  7. Pour egg mixture over top of casserole.
  8. You can add 8-10 thin tomato slices on top.
  9. Bake in pre-heated oven at 350 degrees for 45-50 minutes.
  10. You can make this the night before and put in refrigerator.
