Ingredients:

Directions:

  1. Preheat oven to 375.
  2. Layer onions, mushrooms, garlic and oregano in heavy pot with cover.
  3. Place chicken, breast up, on vegetable. Pour wine over.
  4. Move pot to cooktop. On low, begin heating contents.
  5. Depending on chicken size, in 15 to 30 minutes, turn chicken over and cover pot.
  6. When oven is ready, transfer pot to middle rack. Roast 90 minutes without removing lid.
  7. Check for doneness.
  8. When chicken is done, remove to serving platter, cover and let rest.
  9. Return pot to cooktop, simmer sauce down to desired consistency.
  10. Skim fat.
  11. Serve beside chicken.
