Smoky Summer Vegetable Treats

Ingredients:

  • summer vegetables of your choice
  • fennel bulbs , small eggplants - cut lengthwise , plum tomatoes -halved
  • red /yelow / green bell peppers strips , zucchini and summer squash - cut lengthwise , sweet onion rings , mushroom and/or trimmed asparagus spears
  • 2 tbsp orange juice
  • garnish
  • 1 tbsp fennel fronds , 1 tsp grated orange zest , basil leaves , slivered and 1 garlic clove minced
  • 1/2 cup balsamic vinegar , 1 clove minced garlic , 1 tbsp monced parsely
  • season
  • salt and pepper

Directions:

  1. Just spray with non sticking olive oil and pepper , salt and grill 4 mins on each side of the veges .
  2. Sprinkle orange juice .
  3. Garnish and serve .

  5. Or marinate them for 30 mins or so .
  6. Drain them and coat them with non stick cooking spray and grill as stated above .
  7. Season with salt and pepper and serve .
