Reap a harvest of health benefits with this summer vegetable treats . Ingredients:
summer vegetables of your choice |
fennel bulbs , small eggplants - cut lengthwise , plum tomatoes -halved |
red /yelow / green bell peppers strips , zucchini and summer squash - cut lengthwise , sweet onion rings , mushroom and/or trimmed asparagus spears |
2 tbsp orange juice |
garnish |
1 tbsp fennel fronds , 1 tsp grated orange zest , basil leaves , slivered and 1 garlic clove minced |
marinate |
1/2 c balsamic vinegar , 1 clove minced garlic , 1 tbsp monced parsely |
season |
salt and pepper |
Directions:
1. Just spray with non sticking olive oil and pepper , salt and grill 4 mins on each side of the veges . 2. Sprinkle orange juice . 3. Garnish and serve . 4. ....................................................................................... 5. Or marinate them for 30 mins or so . 6. Drain them and coat them with non stick cooking spray and grill as stated above . 7. Season with salt and pepper and serve . |
