Slow cooker Hatch chile stew with sweet potato, corn and lime

Ingredients:

Directions:

  1. Brown ground beef in skillet and pour off fat. Dump beef in slow cooker. Add the olive oil, garlic, onion, Hatch chiles, sweet potato, corn and tomatoes. Stir and add enough broth to cover ingredients. If you like your chili soupy add more! Add in the spices a little salt and pepper. Stir and cover and cook on low for 6 hours. Taste..if too spicy add a pinch of sugar.
  2. Add lime juice just before serving.
  3. Serve with sour cream, slices of avocado and cilantro on top
