Skillet Sheperds Pie

Ingredients:

  • 1 lb of lean ground beef -i used 93% lean
  • 2 tsp of oil
  • 2 tablesoons of ketchup
  • 2 teasboops of minced garlic (i used the prechoped kind)
  • 1 cup of frozen peas
  • 1 beef boulion cube ( i have used chicken)
  • 1/2 cup of water
  • 1 tbsp of cornstarch
  • 1 tbsp of butter or margerine
  • 1/2 cup of reduced fat sour cream (regular will work too)

Directions:

  1. Turn on broiler
  2. Heat oil in a 12 inch pan ( I used a 10 inch CI)
  3. Coarsely chop onion and add to skillet
  4. Add beef (its okay if its still a little frozen)
  5. Raise heat to high. Cook, turning and breaking meat until it is crumbled and brown. While the meat is browning, stir in Worcestershire sauce, ketchup and garlic
  6. Cook potatoes according to directions
  7. When meat is browned add in peas,reduce heat to medium-low and let simmer
  8. Meanwhile, combine boullion cube and water in a microwave safe cup. Microwave 1 minute to disolve the cube. Stir the cornstarch in briskly until it is well blended.
  9. Pour the cornstarch mixture into the skillet and stir well.
  10. Continue to simmer, stirring occasionally.
  11. Meanwhile finish microwaving the potatoes add in butter
  12. Stir in the sour cream into the beef mixture
  13. Spoon potatoes over the beef mixture and spread them to within 1 inch of the skillet sides.
  14. Sprinkle cheese over the top and broil until the cheese is melted and bubbly, 2 minutes
