Ingredients:

  • 1 small green pepper
  • 1 garlic clove
  • 1/2 cup corn
  • 1/2 cup salsa
  • 1 pint cherry tomatoes
  • 1 tbsp butter
  • 1 tbsp cilantro
  • 1 tbsp lime juice

Directions:

  1. In a skillet, heat oil and add green peppers.
  2. Cook 3 minutes.
  3. Add garlic.
  4. Stir in corn and salsa.
  5. Bring to a boil.
  6. Stir in tomatoes and shrimp.
  7. Cook 1 minute.
  8. Stir in butter.
  9. Spoon over tortilla chips or rice.
  10. Garnish with cilantro and lime.
