Shrimp & Cracker Quiche

Ingredients:

Directions:

  1. Combine cracker crumbs and 1/4 cup melted butter.
  2. Press crumb/butter mixture onto bottom of a 9-in springform pan.
  3. Set aside.
  4. Filling: Saute shrimp, peppers, onion and garlic in butter until cooked thru.
  5. Remove shrimp and vegetables and set aside.
  6. Beat cream cheese& mayo until well incorporated.
  7. Beat in eggs, one at a time.
  8. Slowly add milk, until blended.
  9. Stir in shrimp and veggies.
  10. Pour mixture into prepared pan.
  11. Sprinkle w/ cheeses and S& P.
  12. Bake at 300 F for 80 minutes.
  13. Turn oven off and let set in the oven for 1 hour.
  14. Cool completely on a wire rack.
  15. Cover and chill at least 4 to 8 hours in fridge.
  16. Remove springform pan sides.
  17. Serve garnished with more whole shrimp if you like.
