Shrimp and Croissant Brunch Casserole

Ingredients:

Directions:

  1. Place half the croissant cubes in the bottom of a lightly greased 11 x8 inch baking dish.
  2. Sprinkle with half the cheese, all the shrimp and green onions.
  3. Top with remaining croissant cubes.
  4. In a mixing bowl, whisk the eggs, milk, thyme, salt, and pepper together.
  5. Pour pour over mixture in baking dish.
  6. Sprinkle with remaining cheese.
  7. Cover and refrigerate for several hours.
  8. Bring to room temperature.
  9. Bake in a 350 degree oven, uncovered, for about 40 minutes or until set.
  10. Let stand for 10 minutes.
  11. Cut into squares and serve.
