Ingredients:

Directions:

  1. Rinse shrimp under cold running water and pat dry. (Any seafood you use is best bite-size so dice if needed).
  2. Place in non-metal mixing bowl or large ziploc with lime juice, 1 tbsp jalapeno, 2 tbsp red onion, and a sprinkling of salt.
  3. Toss well to coat and refrigerate, turning from time to time to distribute lime juice until shrimp are opaque, about 1 hour.
  4. When ready to serve, toss shrimp with remaining jalapeno and red onion, and gently add cucumber, avocado, tomato, and cilantro.
  5. Taste and adjust salt if needed.
  6. Serve with tortilla chips.
  7. (Another idea is to serve as a salad over lettuce leaves w/ a spicy cocktail sauce).
