Ingredients:

  • 1 cup peas
  • 1 cup corn
  • 1 cup carrots
  • 1 medium onion
  • 2 cup mushrooms
  • 1 cup oats (quaker oat

Directions:

  1. Preheat oven to 400F
  2. Brown the beef, on stove top. Add the veggies, cut-up onions and mushrooms. Season to taste. Add beef bouillon. Place in a casserole dish (I use a 10 round one so that it's a little deeper than a regular baking pan). Then dollop the mashed potatoes on top and spread to cover.
  3. Bake, about 20-minutes.
  4. This is like pizza: you throw in/on whatever you want. Grated cheese in the mashed potatoes is a wonderful addition, as is garlic. If you're using ground turkey, you can use turkey or chicken gravy, etc. Or you can use frozen broccoli and cheese sauce (thaw first) in place of the other frozen vegetables. Not particularly authentic, but always tasty.
  5. Use Bisquick instead of potatoes.
