Scallops With Mango & Avocado

Ingredients:

Directions:

  1. If using large sea scallops, cut the scallops in half horizontally.
  2. In a large frying pan over medium-high heat, warm 1 Tbsp of the canola oil until hot but not smoking.
  3. Working in batches, sear the scallops for 1-2 minutes on each side, adding more oil to the pan if necessary. Transfer the seared scallops to a plate.
  4. In a glass or ceramic bowl, combine the lime juice, cilantro, 2 tsp salt, pepper flakes, and hot sauce to taste. Add the seared scallops and toss.
  5. Gently stir in the mango and avocado.
  6. Spoon into martini glasses or small bowls. Drizzle with olive oil and serve
