Savoury Cantaloupe Salad

Ingredients:

  • 1 -3 lb cantaloupe , cut into cubes
  • 1 pinch salt
  • 1 pinch pepper
  • 2 tsp olive oil
  • 2 slices soppressata ( salami , cut into thin strips)
  • 1 tbsp chives
  • 1/2 lb goat cheese
  • 6 slices country bread

Directions:

  1. Season melon cubes.
  2. Add vinegar.
  3. Garnish with salami and chives.
  4. Spread cheese on bread and serve alongside.
