Ingredients:

Directions:

  1. Boil the potatoes as you would boiled new potatoes. Do not allow to soften too much. Add a good teaspoon of salt to the pan whilst boiling to bring out the flavour of the spuds.
  2. Fill a high sided prying pan with about 3mm of oil.
  3. Drain the potatoes from the first pan.
  4. Add herbs, garlic and spices and bring the oil to cooking temperature.
  5. Gently place the boiled potatoes in the hot oil, ensuring that you do not let the oil splash as they are introduced.
  6. Cook in the frying pan for about 5 minutes, until the outsides begin to go a golden brown colour.
  7. Remove fro heat and Serve with kitchen tongs.
  8. The oil can be allowed to cool and stored with herbs and spices in for use in other general kitchen applications.
