Sauteed Shrimp with Grapefruit and Avocado

Ingredients:

Directions:

  1. Peel grapefruit, and cut out sections so that no white is on it Boil about 1 1/2 cups of water.
  2. Add couscous and remove from heat.
  3. Let stand until all the liquid is absorbed.
  4. Next heat oil in a skillet add green onions and garlic and sautee for about 2 minutes.
  5. Sprinkle in cumin and cook for 1 minute.
  6. Add shrimp and cook for 3 minutes or until the shrimp are pink and cooked all the way.
  7. Stir frequently.
  8. Stir in grapefruit sections, cilantro, lime juice, salt and pepper.
  9. Serve on top of couscous and garnish with avocado.
