Sausage Stuffed Mushrooms

Ingredients:

Directions:

  1. Heat oven to 325
  2. Separate mushroom caps and stems; put caps in a bowl with 3 tbsp oil and marsala/sherry and set aside
  3. Cook sausage over medium heat until browned
  4. Add chopped mushroom stems and cook 2-3 min
  5. Add scallions, garlic, salt, pepper and cook 2-3 min
  6. Stir in panko and mascarpone until creamy; remove from heat
  7. Add parmesan and parsley; season to taste
  8. Place mushroom caps in shallow baking dish; fill with sausage mixture; bake 45 min
