Sassy  Apple Tarte Tatin

Ingredients:

Directions:

  1. Preheat oven to 425F degrees.
  2. Place dough on baking sheet lined with parchment paper.
  3. Refrigerate.
  4. In bowl, stir together apples, lemon juice and 1/2 cup sugar.
  5. Transfer to colander and let drain for 20 minutes.
  6. In 9 ovenproof saute pan over medium-high heat, melt butter.
  7. Stir in1 cup sugar.
  8. Cook, stirring, until mixture is bubbly caramel brown
  9. (10 to 15 minutes).
  10. Remove from heat.
  11. Arrange apples in pan, overlapping them.
  12. Set over medium heat andcook until apples are tender (about 20 minutes).
  13. Press down apples occasionally.
  14. Remove pan from heat and set on clean baking sheet.
  15. Place dough on top of apples.
  16. Trim edges leaving 1 overhang.
  17. Tuck overhanging dough into pan sides, cut 4 steam vents on top.
  18. Bake until crust is golden, about 20 minutes.
  19. Remove pan from oven and let stand 5 minutes.
  20. Using pot holder,gently shake pan.
  21. Place plate over pan.
  22. Quickly invert pan and plate together.
  23. Lift off pan and let syrup drip over tarte tatin.
  24. Let cool 30 minutes.
  25. Cut into slices and serve with your favorite ice cream
  26. ( esp vanilla caramel flavor ice cream ).
