  1. Heat oil in a large skillet; brown pork on both sides. Add onion, peppers and garlic; cook and stir 5 minutes. Drain; add remaining ingredients except rice.
  2. Cover and simmer 10 minutes, or until pork is tender. Serve over hot rice.
