Ingredients:

  • 3 tbsp butter
  • 1/2 tsp salt
  • 1/3 tsp pepper
  • 1 1/2 cups heavy cream
  • as i am lactose-intolerant, i use rice milk or soy milk, adding several tbsp of lactose-free creamer (unflavored) until i get the right consistency required.

Directions:

  1. Sauté the mushrooms and onions in the butter until tender.
  2. Add the salt, pepper, and wine; simmer over low heat until the mixture is reduced by half, about 5 minutes.
  3. Stir in the cream, bay leaf, celery seed, and thyme.
  4. Bring to a low boil.
  5. Pour over pasta.
  6. Decorate the top of each dish with fresh sliced mushrooms.
