Saltys Okra And Tomatoes

Ingredients:

Directions:

  1. Fry bacon in a large, heavy skillet. Retain drippings in pan. Reserve bacon for later.
  2. Wash okra and remove tips and stems. Slice okra to approx. 1/2 inch pieces. Place cut okra in skillet and sauté over medium heat 3-4 minutes.
  3. Dice tomatoes and add to pan. Crumble bacon and add to pan.
  4. Season to taste with salt and ground black pepper.
  5. Add 1 Tbsp sugar to the mixture and mix well.
  6. Continue cooking over medium heat until okra is tender and tomatoes loose firmness.
  7. Add hot sauce to taste.
  8. Note: For quicker prep or for off-season prep, use 2 each 10oz packages of frozen okra and 2 large cans of stewed tomatoes.
