Ingredients:

Directions:

  1. Mix together diced onion, salmon, egg whites, bread crumbs, carrot, and 1 Tbsp cilantro. Using your hands form 4 patties.
  2. Heat a nonstick pan over med-high for 1 minute Spray with pam. Cook for 3 mins on each side or until lightly brown.
  3. Wipe nonstick pan with a paper towel then heat over med-high. Mist with pam and add squash, zucchini, and thinly sliced onion. Saute for 2 mins then add 1 Tbsp of water and cook for another 5 mins or until veggies are tender. Then add last Tbsp of cilantro and mix. Season with salt and pepper.
  4. Serve one patty with 1 c of veggies.
