Ingredients:

Directions:

  1. Pour oil in a teflon coated skillet and heat to 200 degrees.
  2. Drain salmon.
  3. Grind Triscuits in food processor, place on a plate for breading patties.
  4. Add rest of ingredients to food processor with steel blade.
  5. Pulse for 15 seconds.
  6. Refridgerate ingredients for 30 minutes.
  7. With a large serving spoon, gently scoop out a portion of the salmon mixture.
  8. Gently roll in breading.
  9. Gently place in oil.
  10. Continue adding portions into the oil.
  11. Saute until brown and patties are firm- about 5 minutes.
  12. Smaller portions can be made for appetizers.
  13. Serve with tartar sauce or favorite sauce that is low carb such as fresh dill mixed with sour cream.
