Salmon Fillet With Shallots and Tomato

Ingredients:

Directions:

  1. Preheat oven to 425 degrees F.
  2. Tear off a large sheet of foil for each salmon fillet.
  3. Grease foil with butter and place fish on foil.
  4. Season fish with salt and pepper.
  5. Mix shallots and diced tomatoes together and spread evenly on fish.
  6. Scatter parsley leaves on top.
  7. Fold foil around fish and set foil packet on a cookie sheet,.
  8. Bake 8-10 minutes.
