Directions:

  1. Steam spinach til wilted, 2 minutes. Finely chop spinach
  2. Put oil in pan. add garlic, curry powder and cayenne, cook for 1 minute. Add tomatoes and salt to taste and cook for 5 min. Stir in spinach and simmer till mixture is hot and flavors are well blended, about 10 min.
