Rooz Bit Feen (Lebanese Rice With Chicken)

Ingredients:

  • 2 large onions
  • 2 cups rice
  • 2 tbsp cinnamon
  • salt and pepper

Directions:

  1. Clean and wash chicken. Boil chicken until well done. Remove meat from the bones.
  2. Saute onions in butter or olive oil until brown. In layers over onions, place boned chicken, pine nuts, uncooked rice mixed with salt, pepper and cinnamon. Pour chicken broth over all and cover. Cook until rice is done.
  3. May be served with a side dish of plain yogurt.
