  1. Use a good sharp knife. The chicken meat should be removed from the bone in one piece:
  2. Put the chicken chest down and cut along the back bone. Move the knife along both sides. The breastplate will still be attaches to the meat. Cut it away gently so that you do not pierce the skin. Loosen the meat from the thighbones without breaking the skin. Cut out the wingbones.
  3. Mix all the ingredients for stuffing and distribute it evenly on the chicken meat. Roll it together as firmly as possible to an even sausage. Tie together with string. Brush the roll with melted butter/oil and add salt and pepper.
  4. Cook the boneless chicken at 180 °C for about 50 minuts. Remove the string and let the roll rest for about 15 minuts before cutting it into slices.
  5. Serve with boiled rice and applesauce.
