Romanian Grandpas Macaroni And Cheese

Ingredients:

  • 8 oz (about 3 1/2 - 4 cups shell macaroni
  • cottage cheese either regular or lowfat (if you are lucky enough to get fresh from the farm cottage cheese, it's the best)
  • 1/2 cup diced onion
  • 1 clove minced garlic
  • 1 tbsp butter (or olive oil)
  • salt and pepper to taste

Directions:

  1. Boil the shell pasta according to the package directions in salted water.
  2. Melt the butter in a heavy pan or skillet that has a lid.
  3. Saute the onion until just transparent, add the garlic, stir and remove from heat.
  4. Add salt and pepper to taste.
  5. Cover tightly.
  6. Drain the pasta VERY well and add to the skillet, stirring the onion and garlic through it. If the pasta or onions have cooled, you may stir this mixture over med-low heat until steaming.
  7. Add 2 cups cottage cheese, stir gently.
  8. Place lid on tightly and remove from heat.
  9. Serve immediately.
  10. The cheese in this dish makes a creamy mellow sauce for the pasta without melting and getting stringy IF you don't let it cook after the cottage cheese added.
