Roasted Sweet Potatoes, Potatoes and Carrots

Ingredients:

  • 1 1/2 lbs sweet potatoes
  • 1 1/2 lbs potatoes
  • 1 1/2 lbs baby carrots
  • 2 tbsp olive oil
  • 1 pinch salt
  • 1 tsp oregano
  • 1 tsp rosemary
  • 1 bulb of garlic (about 10 cloves)

Directions:

  1. Peel and cut in bite size pieces all the vegetable. Peel and squash the garlic but do not cut it.
  2. Mix the vegetables, garlic and all remaining.
  3. Ingredients.
  4. Spread on a parchemin lined pan.
  5. Broil until nice and golden about half an hour.
