Roasted Potatoes

Ingredients:

  • 1 large sweet potato
  • 3 tsp salt
  • 2 tsp majoram or basil
  • 1 tsp olive oil

Directions:

  1. Clean all the potatoes. Peel the new potatoes and the sweet potato. Dice all the potatoes and place in a large pot filled with slightly salted water and boil for three minutes.
  2. After three minutes drain the potatoes and in a 9x13 pan place the potatoes and drizzle with olive oil. Sprinkle with salt, pepper, and majoram (if you don't have majoram - basil will work in a pinch). Place in oven and cook for 25-minutes or until golden.
