Roasted Duck W/ Spicy Sauce:

Ingredients:

Directions:

  1. Rub duckling inside and out with salt;
  2. Stuff onions inside of cavity and tie legs together.
  3. Place on rack in roasting pan.
  4. Mix boiling water and honey; pour over duckling, letting water run into pan.
  5. (Duckling should not be put down into the water, keep on rack.)
  6. Roast in oven at 350 degrees for 1 hour.
  7. Prick skin to drain excess fat.
  8. Continue roasting until deep brown and juices run clear, 1 to 11/4 hours longer.
  9. Remove from oven.
  10. Increase oven temperatures to 400 degrees.
  11. Duck Sauce:.
  12. Combine all Duck Sauce Ingredients listed together.
  13. Brush duckling with spicy duck sauce.
  14. Return to oven and roast 5 minutes.
  15. May use remaining sauce as a dip for meat.
  16. Garnish with parsley and mandarin orange segments.
