Roast Acorn Squash

Ingredients:

  • 2 tsp butter
  • 2 tsp mustard (i use dijon but any kind would work)

Directions:

  1. Preheat oven to 400 degrees F.
  2. Cut squash in half and remove seeds.
  3. Brush exposed squash with olive oil.
  4. Roast 45 minutes skin side up.
  5. Mix together butter, brown sugar and mustard.
  6. Turn squash halves over and put half of mustard mixture into each cavity.
  7. Bake for 40 more minutes or until squash is tender.
