Ingredients:

  • 1 3/4 cups sugar
  • 2 eggs
  • 1 lb ricotta
  • 4 cups flour
  • 2 tsp vanilla

Directions:

  1. Mix all ingredients with an electric mixer, except flour, making sure that the ricotta is well blended and scraping sides of bowl frequently.
  2. Add flour two cups at a time until well blended. The batter will be very thick.
  3. Form balls, about 1-inch in diameter and put it on ungreased cookie sheet.
  4. Bake in a 350 degree oven for 10 to 15 minutes.
