Rice Vermicelli (with Shrimp)

Ingredients:

Directions:

  1. Start BBQing shrimp so they're ready for later.
  2. Cook rice noodles in water until soft.
  3. Chill noodles in ice bath.
  4. Add cooked rice noodles (vermicelli) to serving bowl.
  5. Add cucumber, bean sprouts, green onions, and romaine lettuce.
  6. Add BBQed shrimp (they're unflavored, just cooked plain) to top of mound of food in the bowl.
  7. Sprinkle peanuts on top.
  8. In a small sauce bowl, combine fish sauce and sugar, until sugar dissolves.
  9. When ready to eat, pour fish sauce over, and enjoy.
