Rice Pudding Upgraded

Ingredients:

  • 2/3 cup water
  • 2/3 cup minute rice
  • dash of salt
  • 1 1/2 cup whole milk
  • 1/3 cup sugar
  • 1/3 cup raisins
  • 1/8 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1 tbsp butter

Directions:

  1. Add the salt to the water and bring to a rolling boil
  2. Stir in the rice, cover and remove from heat
  3. Let stand 5 minutes
  4. Blend the egg yolk and milk
  5. Mix egg and milk thoroughly into the rice
  6. Add sugar and raisins
  7. Add the cinnamon, nutmeg and butter
  8. Mix well
  9. Return to heat
  10. Heat until boiling again, stirring constantly
  11. Remove from heat
  12. Let stand at least 1 hour
  13. This dish may be served cold or warm.
