Rice Cooked in Almond Milk

Ingredients:

  • 6 cups rice
  • 15 cups hot water
  • 1/2 cup sugar

Directions:

  1. Throw rice into boiling water and cook 5 minutes; drain.
  2. In a food processor, blend almonds and hot water in batches. Strain the resulting almond milk into a saucepan. Add sugar and drained rice.
  3. Slowly bring to the boil and cook, stirring often, 10-15 min, until rice is tender and mixture is fairly thick. It should look like a lumpy puree with a little unabsorbed liquid on the surface.
