Directions:

  1. Cream butter; gradually add sugar, beating well. Add egg, mixing well.
  2. Combine 1 1/2 cups flour, soda, salt, cinnamon, and nutmeg; add to creamed mixture. Stir in applesauce and lemon rind. Dredge the raisins and pecans in remaining 1/2 cup flour; stir to coat well. Fold into batter.
  3. Pour batter into a greased and waxed paper - lined 8 - inch square pan. Bake at 350° for 1 hour or until a wooden pick inserted comes out clean. Cool.
