Quinoa with Roated Veggies

Ingredients:

  • 4 cups quinoa
  • 2 cups onions
  • 1 tbsp olive oil
  • 1/4 cup of parmesan cheese
  • 4 cups spinach

Directions:

  1. Roast vegetables at 350 for 45 minutes, salt, oil and pepper
  2. Cook 1 cup of quinoa with 2 cups of water for 20 minutes
  3. Mix all together and add raw baby spinach
