Quinoa with Peas and Onion

Ingredients:

  • 2 cups water
  • 1 tbsp olive oil
  • 1-1/2 cups frozen peas
  • 1/2 tsp salt
  • 1/4 tsp pepper

Directions:

  1. In a large saucepan, bring water to a boil. Add quinoa. Reduce heat; cover and simmer for 12-15 minutes or until water is absorbed. Remove from the heat; fluff with a fork.
  2. Meanwhile, in a small skillet, saute onion in oil until tender. Stir into cooked quinoa. Add the peas, salt and pepper; heat through. Sprinkle with walnuts. Yield: 6 servings.
