Ingredients:

Directions:

  1. Rinse quinoa well (according to package instructions).
  2. Put 2 cups Vegetable broth, 1/2 cup quinoa, and 1/2 cup couscous into a pot. Add in salt and seasonings and bring to a boil.
  3. Reduce to simmer, cover and cook until all liquid is absorbed (10-15 minutes). Grains should be soft.
  4. In a large sauce pan cook sausage and oil over medium heat.
  5. Add corn, black beans to pan and saute over low heat (until corn is heated through).
  6. Add spinach leaves and stir until well combined with the meat, beans and corn.
  7. In a large casserole dish, combined the sausage/veggie mixture with the couscous/quinoa.
  8. Serve immediately.
  9. **This would also taste great with some shredded cheese on top.
