Quinoa/Couscous Delight

This is a modification of a recipe someone made for my sister-in-law after she had her second baby. It's a wonderful meal, easy to make and put together, and nutritious. You can substitute for your favorite veggies, and use your favorite kind of sausage (or leave it out completely for a VEGETARIAN version!).
Ingredients:
1/2 cup organic whole grain couscous
1/2 cup organic quinoa
fresh spinach leaves, 3 handfuls
3/4 cup frozen organic corn (we use sweet corn from tj's)
1 (15 ounce) can organic black beans (drained)
organic vegetable broth
3 links italian chicken sausage, thinly sliced (we use the italian flavored chicken sausage from trader joe's)
2 tablespoons extra virgin olive oil or 2 tablespoons coconut oil
1/2 teaspoon salt
1/2 teaspoon ground pepper
1/2 teaspoon garlic powder
1 teaspoon trader joe's no salt seasoning
Directions:
1. Rinse quinoa well (according to package instructions).
2. Put 2 cups Vegetable broth, 1/2 cup quinoa, and 1/2 cup couscous into a pot. Add in salt and seasonings and bring to a boil.
3. Reduce to simmer, cover and cook until all liquid is absorbed (10-15 minutes). Grains should be soft.
4. In a large sauce pan cook sausage and oil over medium heat.
5. Add corn, black beans to pan and saute over low heat (until corn is heated through).
6. Add spinach leaves and stir until well combined with the meat, beans and corn.
7. In a large casserole dish, combined the sausage/veggie mixture with the couscous/quinoa.
8. Serve immediately.
9. **This would also taste great with some shredded cheese on top.
