Quick Pineapple Pie

Ingredients:

  • 1 (440 g) can crushed pineapple
  • 2 tbsp water
  • 2 eggs
  • 1 tbsp butter or 1 tbsp margarine
  • 1 precooked sweet pie crust
  • 2 teasp. caster sugar (for optional meringue topping only)

Directions:

  1. Separate egg yolks (keep whites for future use, or use for meringue topping).
  2. Mix custard powder with water.
  3. Bring crushed pineapple and its juice to boiling point in a saucepan.
  4. Add custard powder mixture while stirring.
  5. Take pan off the heat as soon as mixture thickens.
  6. Quickly add 2 egg yolks and I Tblsp butter, stir until well mixed.
  7. Leave to cool.
  8. Spoon into pie crust and chill.
  9. Serve with cream or icecream- or if you have time, make a meringue topping: Beat egg whites until soft peaks form.
  10. Slowly add caster sugar while still beating.
  11. Pile meringue on top of pie.
  12. Bake at 180 for 30 minutes.
