Ingredients:

  1. Heat olive oil over medium-high heat. Add chicken, onion, and pepper to olive oil. Season with salt and peper; cook about 5-7 minutes, or until chicken starts to brown.
  2. Add sliced smoked sausage and cook another 5-7 minutes.
  3. Add rice mix, water, and pimientos. Cover and cook about 20 minutes, stirring occasionally so rice doesn't stick.
  4. Add shrimp and cook about 5-6 minutes, or until shrimp is opaque. Season with Cajun seasoning to taste, if desired.
