Qataieyf - Arabic Pancakes

Ingredients:

  • for pancakes
  • 2 cups warm milk
  • 1/3 cup water
  • 2 tsp dry yeast
  • 1 tbsp white sugar
  • pinch of salt
  • curd filling
  • 200g curd
  • 1 tsp cinnamon

Directions:

  1. Mix yeast with sugar and 1 cup of warm milk. Set aside for 10 minutes.
  2. Pour in the remaining milk, water, flour, salt and mix everything well. Don't leave any lumps.
  3. Put in a warm place for 1 hour.
  4. Take a frying pan and put it on the stove. Let it get really hot, but while baking pancakes, make the heat low.
  5. Pour the batter in a little jug and pour enough to make a 7-8cm diameter [3in] circles - u don't have to form them.
  6. Bake only on one side. At first you will start seeing bubbles and then the top will start becoming dry. When the top is dry - the pancake is ready. Put it on a kitchen towel and cover with another one - don't put them one on the another because they will stick together,
  7. Fillings
  8. For curd filling - mix curd and sugar
  9. For apple filling - peel and grate an apple, mix with sugar and cinnamon.
  10. Final baking
  11. Put some fillinf in the center of the pancake and fold it well.
  12. Spread with melted butter and put them on a baking paper in a baking tray.
  13. Bake in a preheated oven [180C - 356F] for 10-15 minutes.
