Put The Lime In The Coconut Rice

Ingredients:

  • 1 cup white rice
  • 1/2 water
  • 2 tsp. salt
  • small bunch of cilantro chopped
  • 1 lime

Directions:

  1. In a pot, put the rice, coconut milk, water and salt. Bring to a boil and immediately cover and turn down to a simmer.
  2. Let cook about 20 minutes.
  3. Fluff rice, mix in cilantro and squeeze in lime.
  4. Serve and eat.
