Ingredients:

  • 3 1/2 cups flour
  • 1 cup packed brown sugar
  • 1 tbsp baking powder , plus
  • 1 1/2 tsp cinnamon
  • 1 tsp salt
  • 1 tsp nutmeg
  • 1 1/4 cups pumpkin
  • 1 cup milk
  • 2/3 cup vegetable oil
  • 1/2 cup packed brown sugar
  • 1 tsp cinnamon
  • 2 tbsp butter

Directions:

  1. Sift flour, brown sugar, baking powder, cinnamon, salt and nutmeg in a mixing bowl and set aside.
  2. In a large bowl, whisk together pumpkin, eggs, milk and oil. Add flour mixture and stir until moistened and combined.
  3. Fill muffin cups half full. Divide cream cheese into 24 small chunks and place one chunk in center of batter in each cup then top with remaining batter.
  4. Streusel: Combine first three ingredients and stir in walnuts. Sprinkle streusel over tops of muffins.
  5. Bake muffins in 375º preheated oven for 20-25 minutes.
