Pumpkin Soup

Ingredients:

  • 2 medium onions, chopped
  • 2 tbsp butter
  • 2 (14 1/2 oz) cans chicken broth
  • 2 lbs pumpkin, peeled and cut into cubes
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1 cup milk
  • 1 cup water

Directions:

  1. In a deep pot, saute the onion in butter over medium heat until golden.
  2. Add chicken broth, water, pumpkin cubes, salt and pepper.
  3. Bring to a boil.
  4. Reduce heat and simmer about 20 minutes, or until the pumpkin cubes are soft.
  5. Remove from heat and puree the mixture in a blender/food processor.
  6. Return to the saucepan.
  7. Add the milk to the puree and bring to a boil over medium heat.
  8. Adjust seasonings to taste.
  9. Serve and enjoy!
